Baking French Baguettes at Home

The aroma of home baked breads wafting through the home is truly an appetizing experience. Baguettes in particular are a delectable accompaniment to any meal, making the meal more delicious.

Warm home-baked bread is not just delightful to eat but very simple to make too.

French BaguettesAll one needs is some all purpose flour, salt, instant yeast and water to make these mouth watering delights.

You can make them fresh for dinner and eat warmed bread the next day for a great breakfast.

If you plan to have fresh bread for a meal you will need to plan a day in advance.

The kneaded dough needs to sit overnight and can be used anytime in the next four days to give you fresh bread whenever your heart wishes for some.

Here is a simple recipe that is good for four loaves of baguettes.

All you need is five and half cups of all purpose flour or unbleached bread flour, a tablespoon of kosher salt (preferably coarse), two and quarter teaspoons of instant yeast and about two cups of water (warm).

Combine all ingredients and knead lightly till the ingredients blend well. Rest the dough uncovered for five minutes, then knead it again and let it stand for another five minutes.

Place the dough in a lightly oiled bowl and cover with wrap. Refrigerate immediately and leave it overnight.

Remove dough from the refrigerator about two hours before baking time. Break a loaf worth of dough if you want one and gently place it on the work surface. Remember to flour the surface before doing this.

Pat it into thick rectangle, fold bottom half to center, seal seam, and repeat with top half. Start again with top half and then the bottom again.

Place seam side down and gently rock with hand to shape it like a baguette. Place it in a greased pan or baguette pan and let it rest for one and half hours.

Preheat oven for 45 minutes at 450 degrees. You will need a steam pan of 1” rim. Place it under the shelf, where the baguette will be baked.

Score the dough with a knife. Transfer to oven, pour a cup of water in the steam pan and bake the bread for 15 minutes, turn and bake again till golden brown. Remove and cool on a wire rack, slice and serve when warm.
